- Here’s what you’ll need:
- 1 head of kale
- 1 lemon
- Few slices of onion
- Clove of garlic
- Tablespoon of olive oil
- Teaspoon of raw honey
- Dash of sea salt
- How to make:
- Chop up garlic and onion and put into a small jar or dish.
- Squeeze lemon over garlic and onion and let sit for a few minutes.
- Cut up kale and put into bowl.
- Sprinkle sea salt over kale.
- Massage the sea salt into the kale until it starts to wilt down. It might take 2-3 minutes.
- Pour olive oil and raw honey into lemon, garlic and onion mixture.
- Shake it up and pour over kale.
- Massage the dressing into the salad as well.
- The longer it sits, the softer it will get.

OMG…honestly I didn’t think I would like it because of the texture…but I love the texture. I usually use kale in my soups. Love the dressing; so easy with a lot of flavor. I’m not growing any kale because it’s too hot where I live. Lucky for me, my store carries organic produce.

Sounds tasty, though I just moved from Michigan to the south where all the kale has already bolted. I’m new to the whole cooking of greens thing that I’m finding is so popular here in the south… I wonder if this sort of treatment might be a good substitute;)

i have a share on a farm and we get an abundance of kale each week. this salad topped all the recipes i’ve tried so far. now, what to do with all that chard……

I tend to use a little bit of Braggs Liquid Aminos when I massage mine… with some olive oil. It is a totally different recipe than you have here but it gives it an interesting flavor.

I like kale raw in salad or steamed/boiled with a bit of lemon and Veg Sal.
Nicole just hide it in something else like a pot of beans, a stir fry or use it like lettuce in a burrito/taco.

Another cool thing you can do with kale is bake it and eat it like potato chips. Sprinkle with some olive oil, bake, and season as desired.

Well, after I posted I realized the recipe was for Kale, not chard. lol
Bought some kale and made this salad. We had never had kale before and now it is one of my favourite salads. My husband even likes it!
